<p> Sic Transit Gloria Mundi is selected for rare intensity, clarity of expression, and potential to reflect the estate’s underlying viticultural principles. The vineyard selected in 2011 has deep granite-rich soils with large stones, boulders, and breaks which require the vines to develop deep root systems and produce complex, multi-layered wines.</p> <p> Weather during the 2011 growing season was moderate and consistent. The berries ripened evenly and developed high phenolic concentration.</p> <p> This wine was harvested by hand into 18kg lug boxes and sorted manually for consistency, ripeness, and the removal of leaves from the bunches. The destemmed bunches were fermented in a 600 liter stainless steel tank with daily remontage and délestage. The wine is composed entirely of free run juice. Following racking, the wine was matured for 24 months in a 225 liter French oak barrel. Prior to bottling, the wine was fined with the whites of two eggs. Minimal sulphite addition has yielded a wine ready to drink now and with a total sulphite level of less than 30 g/hl.</p>
