Fresh fruit and acid dominate this old-vine blend of Chenin Blanc and Viognier. Low alcohol and natural acid are key to ensuring that the wine can age well. Subtle citrus and orchard fruit flavours from Chenin Blanc are elegantly balanced by Viognier.

<p>The grapes are whole bunch pressed. No settling is carried out and no fining agents, enzymes, tannins, acid or SO2 are added at crushing. The juice is fermented in stainless steel tanks at temperatures around 25°C. No cooling is used during fermentation. The wine is aged in a concrete tank for 11 months.</p>
