Located on the Western Cape of South Africa - Paarl and surrounding areas. Cold wet winters and hot dry summers. Vineyards situated on the warmer western slopes. Fermented on skins 12 to 18 days after which the skins are pressed and the is inoculated with malolactic bacteria to initiate a 2nd fermentation. Then the wine is filtered and stabilized prior to bottling.
