Small-batch collaboration between Leon Coetzee and Margaux Nel with the assistance of sommelier Ewan Mackenzie...A.K.A as the Wine Thief. The result is a beautiful balance of weight coming from the fermentation in barrel, and extended fine lees contact (11 months) alongside a vibrant palate expression of crunchiness, tanginess and zest that contributes to a multi-layered and extremely pleasurable wine. Sommelier's Pairing suggestions: Thai dishes, grilled lobster, spicy fish tacos, roast chicken and all creamy and nutty cheese-driven saucesTotal production 1500L Sourced from 3 cool climate regions: ELGIN, WALKER BAY (HERMANUS) and CAPE AGULHAS. Harvested and fermented separately in older (2nd/3rd & 4th Fill) 300L French oak barrels with indigenous yeast. The Elgin and Walker Bay components were left to naturally undergo malolactic fermentation, whereas the Cape Agulhas component was halted half way in order to retain freshness and the distinctive "TANG".
