<p>The soils are sandy clay with a northeast aspect. The vineyards are trellised with a yield of approximately 9 tons per hectare. Grapes are picked at 24 degrees balling.</p> <p>After picking, grapes are crushed, chilled, and settled overnight. A long, cool fermentation at 13 degrees Celsius in stainless steel tanks yields a simple, clean, natural wine.</p>
