The Roussanne 2019 (second [2017 maiden] vintage) also made alongside Attie Louw of Opstal Estate in the beautiful Slanghoek Valley - out towards Worcester in the expansive Breedekloof River Valley. Kept very natural, harvested it when it tasted right and the grapes just started to turn speckly and golden, touch of skin maceration for an extra layer, but mainly keeping it cultivar-specific in its focus Natural ferment (same as all Wine Thief wines), allowed to naturally go through MLF in 1x 500L old French oak barrel, minimal sulphur additions, bottled with minimal filtration.
