This wine is the crown jewel for Bodegas Valdemar. They just make this wine when the quality of the grapes are outstanding to make sure they maintain their premium quality standards of this wine through the vintages. The ageing potential is superb for the Gran Reserva.
Fermentation process: After destemming and crushing, a cold pre-fermentation takes place for 48 hours at 17º to extract primary aromas. The alcoholic fermentation begins in stainless steel tanks at 26º to get structure and color. After 12 days maceration malolactic in oak barrels follows and 32 months of aging in French and American oak barrels.
This wines displays attractive red cherry color with a burgundy rim. Potent spicy aromas, together with vanilla and cocoa notes. Very potent on the palate, rounded, with a long aftertaste and personality.
This wine matches perfectly with red meat, stews and roasted dishes as well as game. Particularly suited for cold meat and dry cheeses. Best served at 16/18 C.
