Source of Grapes: Simonsberg-Paarl, Western-Cape , South-Africa Harvest dates: 1st Week of February 2022 Winemaking: Our 2022 Rose was made using the Free run juice exclusively from Pinotage to minimize color and phenolic extraction from the skins and preserve the natural acidity. The juice was settled overnight before inoculation with cultured yeast and cold fermented to enhance the aroma and flavor profile of the wine. Maturation: The wine was matured for one month on its gross lees in stainless steel tanks. The wine was stabilized using only bentonite and light filtration before bottling.
