The delicate flavours build further on the palate and shows concentration and great balance. Tropical and green notes are rounded off with a long, mineral finish.
Grapes were carefully selected from exceptional sites with exposure to cool afternoon sea breezes. Harvesting was done at perfect ripeness during early morning hours to achieve the complexity that is expected from a modern Sauvignon blanc. Skin contact before cold fermentation was done to enhance concentration, with post fermentation lees contact to build the palate weight. This wine shows true class on nose and palate.
